Our capers are very popular in Italy for their tangy flavor and crisp texture! Naturally sour and bitter, they are pickled in a vinegar brine to balance the flavors. The flesh of these capers is very dense and firm. Well crushed, they can be incorporated into various dishes such as vitello tonnato or ossobuco alla Milanese.
Harvested in the Apulia region by two artisan brothers, this spice is actually the flower bud of the caper bush, picked just before it blooms. These capers are BRC Food certified.
